Comments

- Hand sink supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available in labelled spray bottles, however concentration was over 200 ppm. Ensure to mix only 1 oz of bleach to 1 gallon of water for proper concentrations.
- Three-compartment sink available for manual warewashing
- Walk-in cooler measured to be at 1C
- Walk-in freezer measured to be at -19C
- General sanitation satisfactory.
- No signs of pest activity noted at time of inspection
- Reminder for cooling hot food: Cooked food must cool from 60C to 20C within 2 hours and from 20C to 4C within 4 hours in the cooler/freezer.
- Note: facility was in production earlier this morning; kitchen and equipment still to be cleaned and sanitized for the day.
