- Coolers maintained at 4C or less.
- Sauce cooler not in use at the time of the inspection.
- Walk-in freezer maintained at -19C.
- Stand-up freezer not in use at the time of the inspection.
- Hot holding units were not in use. Ensure units are maintained above 60C.
- 200 ppm quats sanitizer available in spray bottle and from the dispenser.
- High temperature dishwasher registered 71C at the plate level.
- Ice machine maintained in sanitary condition.
- Food stored off the ground and covered.
