Observation (CORRECTED DURING INSPECTION): Dairy products (milk and cream) stored in milk and juice coolers are ranging between 5-6C.
Corrective Action(s): Staff moved products into working coolers. Both walk-in cooler and prep cooler space may be used.

Do not store dairy products or other potentially hazardous foods in the milk or juice cooler until they have been serviced and a follow-up inspection has taken place.

Corrective Action(s): Remove droppings, sanitize the area with a bleach solution. Continue to monitor for new rodent activity.

Observation: Food debris and grease accumulation noted in the crevice under the oven door on both ovens facing the service window.
Corrective Action(s): Remove food debris. Clean and sanitize all cracks and crevices where debris or grease may accumulate.

Observation: Milk and juice cooler had ambient air temperature of 5.5C and 5.6C.
Corrective Action(s): Service coolers as soon as possible. All coolers must be capable of maintaining an air temperature of 4C or colder at all times. Must be able to compensate for longer periods where the doors are open for loading supplies.
