Observation: Ware washer has been serviced, however pressure still not reaching the minimum recommended value of 20 (+/-5psi). As a result, the rinse water is not reaching the dishes in the washing racks at a minimum of 71C. Cycles checked at time of inspection did not surpass 68C
Corrective Action(s): Ware washer must be repaired/ replaced/ maintained to ensure 71C minimum water is reaching all surfaces to be sanitized.

Dishwasher repair receipt on site and available for review - please follow up with the recommendations from your technician.
3 compartment sink is currently supplied with a 100-200ppm chlorine solution for manual sanitizing.
**You must continue to manually sanitize ALL dishes. This also must include an air dry step after soaking in the sanitizer solution.
