Observation: Stainless steel container of chicken observed stored on lower shelf of preparation table. Internal food product temperature 17 degrees C. Staff stated chicken has been thawing in this manner since the morning.
Corrective Action(s): Discarded. Thaw all frozen potentially hazardous foods in the cooler or under cold running water. Store all cold potentially hazardous foods at or below 4 degrees C.

Observation (CORRECTED DURING INSPECTION): Staff washroom hand sink paper towel dispenser out of battery. Hand sink in dishwashing area paper towel dispenser empty. Operator to obtain batteries for paper towel dispenser and in the interim rolls of paper towels placed by hand sinks.
Corrective Action(s): Ensure all hand sinks are provided with liquid soap and paper towels. This is a recurring issue. Further non compliance will result in the issuance of a violation ticket and/or ORDERS.

Observation: Freezer in front area ambient air temperature -10 degrees C will ice buildup.
Corrective Action(s): Defrost the freezer in the front area and adjust temperature if required. Ensure all frozen potentially hazardous foods are stored at or below -18 degrees C. Correct by January 2, 2019.

Observation: General sanitaiton requires improvement. Food debris accumulations observed in and around the pizza oven. Floor requires cleaning in the walk in cooler.
Corrective Action(s): Throughly clean the above noted areas. Reminder to clean areas and equipment in accordance to your sanitation plan. Correct by December 27, 2018.

Dairy products not allowed to be manufactured until renovations are complete and an initial inspection is conducted by Fraser Health.
