-Follow-up inspection to February 26, 2018.
-Operator has completed a FoodSafe Level 1 course.
-Hot potentially hazardous soup broth is now cooled at room temperature until approximately 60C, followed by additional cooling using a cooling wand. Soup broth made the previous night was at 4C.
-Chemical dishwasher has been serviced and cleaned and was at 100ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing). Testing sheet is now being completed to verify the chlorine sanitizing temperature on a daily basis.
-Deli slicer was found to be clean and sanitary. Staff have been instructed on proper cleaning and sanitizing procedures.
-Quats sanitizer spray bottle was tested at 200ppm. Solution is now properly mixed as per the manufacturer's instructions.
-General cleaning has been carried out throughout the facility. Operator will be carrying out weekly cleaning of the facility.
-Did not find any single use items being saved for reuse at the time of inspection.
