Observation (CORRECTED DURING INSPECTION): **Note - This is a repeated violation**
0 PPM chlorine residual detected in the chlorine sanitizer container in the food prep area.
Issue corrected at the time of inspection. Operator refill the sanitizer container in the food prep area. 200 PPM chlorine residual now detected in the sanitizer container.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Multiple containers and bowls of food in the cooking area prep cooler and side prep cooler were not stored covered/ protected.
2. Raw eggs still stored above fresh produce in the walk-in cooler.
**#1 - 2 are repeated violations**
3. Missing light shields/ covers in the cooking area and by the dishmachine. As per operator, light shields/ covers have been on order and are being delivered.
4. Take-out containers (faced-up) was stored below the single-use paper towel by the dishmachine handwash station. This will lead to contamination of the take-out containers whenever the handwash station is used.

Corrective Action(s): 1. Protect all food in the cooking area prep cooler and side prep cooler with a plastic wrap or cover to prevent potential cross-contamination of food.
2. Re-arrange the raw eggs so that they are stored below the fresh produce in the walk-in cooler to avoid potential cross-contamination in the event the egg breaks.
3. Install the light shields/ covers over the exposed light bulbs as soon as they arrive.
4. Store the take-out containers inverted to avoid contaminating the food contact surfaces or store the take-out containers in another location to avoid contamination.

Food, debris, grease and buildup still noted on the wall and hard to reach areas of the floor in the kitchen and dishwashing area.

Observation: Thermometers noted in 2 freezer units. 2 freezers still missing thermometer.
Corrective Action(s): Obtained thermometers for the 2 freezer units still missing thermometer. All refrigeration units must have an accurate thermometer available to allow staff to ensure it is running within the proper temperature range.

Follow-up inspection conducted for inspection report# KLAI-CCRS6N
Did not observed any potentially hazardous food sitting in the cooking area at room temperature for an extended time period. Any food requiring refrigeration that is brought out for the lunch rush MUST be brought back to the refrigerator within 2 hours.
Rice in the rice cooker were being hot held to more than 60C.
Handwash station near the dishmachine was equipped with hot and cold running water, liquid soap and paper towel.
200 PPM chlorine residual detected in the sanitizer container in the back of house by the dishmachine. However, 0 PPM chlorine residual detected in the container in the prep area (see violation #302).
All food in the walk-in cooler were stored protected/ covered at the time of inspection. However, not all food in all refrigeration units were stored protected (see violation #209).

As per operator, lost FOODSAFE level 1 certificate. Has requested for certificate to be re-printed. District inspector to verify if FOODSAFE level 1 is still relevant.

Note: Improvements from the last inspection are noted during this routine inspection, however some violations did not appear to be addressed or may be repeated violations. Please be diligent in correcting all violations cited during inspection report# KLAI-CCRS6N. Anymore repeated violations or if no further improvements are noted during the next follow-up inspection, progressive enforcement actions may be taken.
