Corrective Action(s): Once exhaust canopy has been thoroughly cleaned establish a routine cleaning schedule ie every 4 months.
Ensure underside ceiling of hot holding unit is cleaned daily.
Ensure Management visually verifies that staff are properly cleaning and sanitizing the equipment as discussed.

Correction: All these station must be properly cleaned ans sanitized daily.
