Observation (CORRECTED DURING INSPECTION): Staff have been washing dishware manually in the sink or washing dishware in the dishwasher (not operating properly) without a sanitizing step
Corrective Action(s): Operator must repair the high temperature mechanical dishwasher immediately. Mechanical dishwasher must be able to sanitize dishware at 71C at the dish surface (82C at the front gauge)
Provided operator with a 2 compartment sink manual warewashing diagram and 2nd compartment of the warewashing sink was prepared with a 100 ppm chlorine bleach solution. Follow the diagram and ensure that all dishware is properly sanitized manually until the mechanical dishwasher has been repaired.

Observation: REPEAT OBSERVATION: rodent droppings noted in the following areas:
-underneath the large food storage shelf in the back of house
-around the prep cooler and main equipment shelf in the kitchen
-around the speaker storage and behind the false wall (next to the main washroom)
-under the customer creamer/lids station
-in the corners and along the walls of the back of house storage room leading to the hallway
this is not an exhaustive list
Corrective Action(s): Audit high rodent traffic areas such as back storage area, back storage room, and around the patio chair storage.
Fill in rodent entry holes
Remove the rodent droppings and sanitize area using a 100 ppm chlorine bleach solution.

Ensure that deep cleaning to remove rodent droppings and to monitor for activity is done on a more frequent basis until rodent issue has been resolved
