Wooden counter cooler is now at 3 deg C, operator has gotten it serviced
One large bucket of meat sauce in the walk in cooler was probed to be 3 deg C, operator has said she has ordered an ice wand to cool her large pots/containers of sauces rapidly instead of just placing them in an ice bath. Placing the foods in the ice bath is ideal for small containers of food only. For large pots, the ice wand can be used to stir the foods and cool them down rapidly from the inside.
No salad dressing placed in the non-working cooler by the bar area at time of inspection. Discussed with owner that if she wants to use this non-working cooler as a storage device for salad dressings as a means expedite takeout orders (individually packaged salad dressings were being stored here previously), then they cannot be out at room temperature for more than 2 hours. Once 2 hours is reached, all salad dressings (and any potentially hazardous foods) must be discarded, as bacteria will have grown on them and can produce toxins.

For next inspection:
1) Either remove the non-working cooler or replace it
2) Ensure that all coolers are consistently reaching <4 deg C
3) keep ice wand on site and ensure any large containers of sauces/foods in the cooler are <4 deg C (measured from the middle of the container, not on the surface/outside which is usually cooler).
