Follow up to report # MBEK-CQKTFN.
Proper cooling procedures appear to be in use. Staff on site informed that ice wands are being used to quickly lower the internal food temperature of liquid food items that are being cooled (gravy sauce), and a probe thermometer is used to verify the internal food temperature is 4 degrees C or less before transferring to large volume/low surface area food containers (buckets). Internal temperature of cooled foods (gravy sauce in buckets in walk-in cooler) probed at time of inspection measured at 3 degrees C. Multiple buckets checked. Functional probe thermometer on site. Three ice wands available in freezer.
Vegetable cutter noted on previous routine inspection report is stored in sanitary condition.
Gap that was observed at back door during previous routine inspection has been properly sealed.
Pest control invoice for service date April 6, 2023 was forwarded to the district Environmental Health Officer (EHO). Pest control program discussed at time of inspection.
Areas noted on previous inspection report have been cleaned; however, hard-to-reach areas require additional cleaning.
Temperature and sanitation logs are being maintained. Logs available for review and up-to-date.
