- General sanitation - good.
Front:
- Sushi cooler at 4C.
- Under-counter cooler in sushi area at 4C.
-Sushi area glass door cooler at 4C.
-Sushi rice pH of 4.0.

Kitchen:
- Prep. cooler at 4C (top and bottom).
- Upright cooler at 4C.
- Refrigerator/freezer was at 3C/-14C.
- Chest freezers at -18C or below.
- Chemical dishwasher at 50 ppm of chlorine (a final rinse).
- Hot holding >60C (rice/soup).
- Food stored safely at the time of inspection (covered,Off the floor, and organized).
- Hand-wash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Bleach sanitizer pails were labelled and were at 100ppm.
Note: Sushi cutting board sanitized after each service.
- Ice machine - clean;an ice-scoop stored safely at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom hand-wash station supplied with hot/cold running water, liquid hand soap, and single use paper towels.
