Observation:
The following areas are damaged and are no longer sealed or cleanable, this will attract pests.
- Wood box under the dishwasher, in the main kitchen, has water damage and is rotting, and the wood is not sealed or cleanable.
- Lower shelf storing the dishwasher dish racks, in the main kitchen, has damaged and unsealed wood.
- Wall has dents and peeling paint in the food storage room.
Corrective Action(s):
Repair and/or replace the damage areas with materials that are durable, level, smooth, sealed and cleanable.

A routine inspection was completed:

Main Kitchen
- Upright cooler 4C; thermometer present.
- High temperature dishwasher had rinse cycle of 76.4C at the plate's surface as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle had strength of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and food stored 6" off the floor on shelves or cupboard.
- No expired foods in used. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests. A professional pest company monitors the premises at least once a month. Tin traps placed throughout premises.
- Valid FoodSafe certified staff present, or possesses an equivalent certificate.

Blue Kitchen - Mainly resident use
- High temperature dishwasher had rinse cycle of 76.3C at the plate's surface as per max/min thermometer.

- No signs of pests. A professional pest company monitors the premises at least once a month. Tin traps placed throughout premises.

ACTION
Replace the wooden box under the dishwasher in the main kitchen as it is unsealed and rotting due to water damage. Replace it with a material that is durable, smooth, sealed and cleanable.
Replace the lower shelf storing the dishwasher racks as it has exposed wood that is damaged and unsealed. Replace it with a new shelf made of a material that is durable, smooth, sealed and cleanable.
Repair the wall in the Food Storage Room as it is dented and paint has chipped away, exposing the drywall. Repair and reseal the wall so it is smooth, level, durable, and cleanable.
