Observation (CORRECTED DURING INSPECTION): Food contact surfaces (plates, cups, and utensils) were not properly washed and sanitized as 0 ppm chlorine sanitizer was measured at the plate after the dishwasher final rinse. This is a repeat violation.
Corrective Action(s): Staff placed all of the plates, cups, and utensils through the dishwasher again after it was repaired.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine sanitizer was detected after the dishwasher final rinse. The chlorine sanitizer stock bottle was empty at the time of inspection and test strips were not located near the dishwasher machine. Future repeat violations will result in the issuance of corrective ORDERS and/or violation tickets.
Corrective Action(s): Staff re-connected the dishwasher to a new chlorine sanitizer stock bottle and primed the dishwasher. 100 ppm chlorine sanitizer residual was measured at the plate after the dishwasher final rinse.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Paper towels were missing at the handsink in the kitchen during the evening shift. It was mentioned that the handsink lacked paper towels from an earlier shift.
Corrective Action(s): Ensure each handsink is supplied with liquid soap, hot and cold running water, and paper towels. Retrain staff to ensure that handsinks are re-stocked with liquid soap and paper towels immediately after they finish.

Observation (CORRECTED DURING INSPECTION): The scoop for the ice machine was not stored in a clean container at the time of inspection and it was stored directly on the ice machine.
Corrective Action(s): Ensure the scoop for the ice machine is stored in a clean container. Post a sign on the ice machine to remind staff to keep the ice scoop in a clean container between use if need be.

Observation: The liquid soap dispenser was not in good working order at a handsink in the kitchen.
Corrective Action(s): Ensure liquid soap is available via the dispenser from the handsink; Correct by Monday (December 12, 2016).

Walk-in-cooler and prep. coolers were 4 degrees C or less.
Bar coolers were 4 degrees C or less.
Freezer temperatures were satisfactory.
200 ppm QUATS sanitizer was available in the spray bottles and from the dispenser.
Ice machine was clean.

A follow up inspection will be conducted next Tuesday at 4 PM.
