Observation (CORRECTED DURING INSPECTION): Food in upright cooler near cake moulds and bulk bins was measured at 8 - 9 C.
Corrective Action(s): High-risk foods in cooler for longer than 2 hours discarded during inspection. Remainder of perishables moved to working coolers/freezers. Ensure all cold potentially hazardous foods are stored at 4 C or colder at all times.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): (1) Opened tin of pineapples observed in cooler. Tin had been open for at least one day.
(2) Operator has been washing and reusing paper ice cream container lids as covers for dry toppings at the front counter.
Corrective Action(s): (1) Discarded. Ensure staff transfer food in opened tins to a suitable food-grade container after opening. Leaving high-acid foods in opened tins may result in leaching of metals into the food, and subsequent illness on consumption.
(2) Discussed during inspection. Ensure only plastic or metal lids (designed to be reused for food) are used. Do not wash and reuse disposable items.

Observation: Upright cooler containing dairy products, whipped toppings and nuts is not maintaining 4 C or colder.
Corrective Action(s): Keep all potentially hazardous foods out of this unit until fixed and reinspected by a health officer. Have unit operating at 4 C by Friday (14th July 2017).

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Several coolers and freezers on site (including the two main ice cream display freezers at front) lack thermometers.
Corrective Action(s): Install accurate thermometers in each unit by tomorrow (13th July 2017). Ensure temperature logs are kept daily. This will allow you to catch malfunctioning coolers almost immediately.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Operator has completed Food Safe Level 1. However, neither of the two staff on site at time of inspection had completed food safety training.
Corrective Action(s): Register additional staff for Food Safe Level 1 (or an equivalent course) by the end of this month. At least one staff member with this training must be on site while the store is operational.

Comments

*General sanitation satisfactory. No evidence of pest issues observed during inspection.
*Hand sinks equipped with warm water, liquid soap and paper towels.
*Staff appear to be following full 3-compartment warewashing methods. Note: replace lemon-scented bleach with regular, plain bleach by the end of today (12th July 2017).
*Tools and utensils generally stored in clean condition.
*Ensure bleach sanitizer is ready to use at 100-200ppm, and that wiping cloths are stored in this solution between uses.
*Note: ensure blender jugs are thoroughly washed, rinsed and sanitized at least every 4 hours.
*Note: replace paper towels/fix dispenser in washroom by the end of today (12th July 2017).
*Note: operator has started trial kulfi production on site. Moulds available on site appear to be of brazed construction, and difficult to clean. Verbal directive given to operator to immediately cease production of kulfi until such time as (A) kulfi production has been approved on site, and (B) suitability of moulds for food service use has been determined.
