- All hand washing sinks were accessible/unobstructed and properly supplied with hot/cold running water, liquid soap, and paper towels.
- All sinks maintained in sanitary conditions.
- Quat sanitizer solution for food-contact surfaces available at 200 ppm.
- High-temperature dishwasher reached 74.5C at the dish surface during rinse cycle. Good, minimum of 71C required at the dish surface.
- All coolers measured 4C or less.
- All freezers measured -18C or less.
- Hot-held items (pasta and soup) measured at 60C or hotter.
- Accurate thermometers available. Temperature logs maintained.
