Observation: 2 issues;
-rice pudding in the walk-in cooler left uncovered on wire racks
-1 container of waffle fries stored on the floor in the walk-in freezer (uncovered)
Corrective Action(s): Ensure that all foods are protected from contamination by keeping them covered and off of the floor

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed in the following areas;
-along the walls and on shelves in the kitchen dry storage
-along the walls and on shelves in the dishwashing area storage
-along the walls in the storage area adjacent to the washrooms
-underneath the staff resting area
-in the corner of the counter by the toaster
-underneath the countertops of the prep/hand sink in the kitchen (near windows)
-on cans, buckets, and bags in the dry storage room
-in the hot water tank room
-under the counters holding the food processors

Corrective Action(s): remove shelves from the wall and thoroughly clean and sanitize the areas noted above.
clean and sanitize using a 100 ppm chlorine bleach solution. follow all recommendations of the pest control company.

Observation (CORRECTED DURING INSPECTION): Wall along the storage area adjacent to the washrooms noted to be broken and had shredded insulation along the wall/floor joint.
Wall corner beside the hot water tank room found to be chipped and chewed away at the floor area.
Corrective Action(s): Repair the above noted locations and install baseboards.

Comments

General observations:
All back of house coolers (walk-in and prep) were 4 degrees Celsius or less.
All front of house coolers (pop, dessert and prep) were 4 degrees Celsius or less.
All freezers (walk-in and small chest freezer in kitchen, and dessert freezer in servery) were -18 degrees Celsius.
Food storage practices were satisfactory - except as noted above.
Organization of storage areas was average.
All hand wash sinks in the front and back of house were stocked with liquid soap and paper towels.
All sinks were equipped with hot and cold running water.
Food handler hygiene and food handling practices appeared satisfactory.
Bleach sanitizer for in-use wiping cloths had a chlorine concentration of 200ppm.
Low temperature dishwasher had a chlorine sanitizer residual of 100ppm.
Chemicals were stored in a safe manner.
