Observation (CORRECTED DURING INSPECTION): Sanitizer bottle in the deli was at 0ppm QUAT.
This was being used to clean the deli slicers at the time of inspection.
Dispenser at the wall was at 200ppm.
Operator changed during the inspection, thank you.
Corrective Action(s): Please ensure bottles of sanitizer are changed frequently. Water is not needed, fill directly from the wall dispenser. Test using strips occasionally to ensure sanitizer is at 200ppm Quat.

Observation (CORRECTED DURING INSPECTION): Dishwasher at 68C in first run and at 69C in second run. 69.3C in third run.
Dishwasher is used for low risk items such as bread knives. No customer dishes (only single use paper for deli).
Gage is reaching well above 182F during final rinse.
Deli does have 2 comp sink for rinsing and sanitizing dishes. Quat sanitizer 200ppm.
Corrective Action(s): Please service dishwasher to ensure 71C is reaching plate surface.
