Observation (CORRECTED DURING INSPECTION): Observed a pan of pre-cooked bacon noted on a table next to a microwave. Unsure how long the bacon stayed at room temperature. When inquired, owner indicated that it is part of their routine to take bacon out from the cooler and put them on a hot plate to heat up or leave it in the insert of a prep cooler.
Corrective Action(s): Required operator to only take out what is necessary at the time and take more out when needed only. Operator covered and returned it to a cooler at 4 C or lower

Observation (CORRECTED DURING INSPECTION): Observed utensils in a drawer without a front (damaged) and the drawer was not maintained in sanitary condition. When inquired, owner indicated that they are reserved utensils that they do not use normally.
Corrective Action(s): Required operator to clean and sanitize them in a dishwasher and store them away in a clean container with a proper cover. Operator started cleaning them at the time of inspection

*Operator indicated that he would like to insulate the inner wall of the walk-in cooler that is bordering outside. Explained that as long as the material is durable, easily cleanable and non-absorbent, no objections made.*
