Observation: Potato fry cutter soiled with food debris.
Corrective Action(s): All food equipment, food utensils and food contact surfaces must be cleaned of all debris, then sanitized after use. Food equipment, utensils and work surfaces in constant use for the same purpose must be cleaned and sanitized a minimum of every 4 hours or when changing uses.
All food equipment and utensils where possible are to be cleaned and sanitized after use, using the dishwasher equipment provided.

Observation: Icecream dipper well filled with water, tap turned off.
Corrective Action(s): When dipper well is in use water tap must be turned on to provide continuous, constant flow of running water.

Observation: Door entrance to kitchen - door sweep provides gap that allows entrance of pests.
Door to corner storage room - has no door sweep and allows entrance of pests.
Previous snap traps in kitchen have been removed.
Corrective Action(s): Install / modify door sweeps, when doors are closed any gap between floor or door jam must be less than 1 cm.
Re-deploy snap traps in kitchen storage areas.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Mouse droppings observed in the following areas: throughout storage closet - on floor, corners and shelving, inside grease trap cabinet - floor and corners, inside all bench seating, througout collapsing door storage closet, in back of kitchen under office counter, and corners under icecream display.

Debris build-up under dishwashing sinks.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.

Low temperature dishwasher repaired, 50 ppm chlorine detected after cycle.

Chlorine test strips available to test dishwasher operation.

Cold water faucet repaired at back handsink to allow for handwashing.
