*Follow-up inspection for prep line cooler temperatures.
*Left hand side of unit was maintaining food at approximately 6.5 C at time of inspection. Underside of insert trays measured at 4 C.
*Chefs state further modifications will be made to insert tray section to reduce loss of cold air around trays. Ensure insert tray temperatures reach 4 C when covers have been in place for a significant period of time (i.e. before rush periods).
*Continue to monitor insert tray temperatures, and ensure cover is placed over top section when not in heavy use. Temperature of insert trays will be checked at subsequent inspections.
*Note: it is highly recommended that a hinge/latch system be installed on the cover, in order to allow staff to more easily close/hook open the cover during use.
