Observation: High temperature dishwasher is not operational. Manual dishwashing was not set up at the time of visit. Observed cleaned food contact surfaces (plates, cups, utensils) stored on top of a water absorbing mat. Operator prepared manual dishwashing (3 compartment sink method) at this time and rewash and sanitized aforementioned food contact surfaces.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Hand washing sink was not working at this time. Observed staffs using 3 compartment sink for washing hands. New hand washing sink available on site. Operator was planning to replace the old hand washing sink today.
Corrective Action(s): Hand washing sink to be replaced. It must be equipped with hot and cold running water, liquid soap and paper towels. Correct this by: April 12, 2022.

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer measured at >200 ppm chlorine, resulting in chlorine test paper bleaching out. 100 ppm chlorine sanitizer prepared at this time.

Observation: 1. Excessive pooling of water by the dishwasher and 3 compartment sink.
2. Dry looking rodent droppings noted by the back door.
Corrective Action(s): Clean and sanitize areas impacted by pooling of water and rodent droppings. Correct this by: April 12, 2022.

Observation: High temperature dishwasher's sanitizing cycle noted at 63C. Excessive water leakage noted from the dishwasher.
Corrective Action(s): Dishwasher is to be serviced. Sanitizing cycle temperature must be at 71C or higher at the plate level. Correct this by: immediately.

Up right cooler, sandwich cooler and sliding door cooler measured at 4C or less.
Up right freezer, cabinet freezer, 2 door freezer and freezer by the hall way measured at -18C or less.
Hot holding measured at 60C or higher.

*NOTE: The operator is to use take out containers only until the dishwasher is serviced and the sanitizing cycle of the dishwasher reaches 71C or higher at the plate level.
Follow up inspection scheduled for April 12, 2022, at 10:45 AM. Facility closes on Tuesday.
