Nothing stored in the handsink today and no cooling observed.
Soups in the hot holding unit were 64 to 68C
Prep cooler has been cleaned and is in use but some dried up sauce is noted and operator will need to reclean those specific spots as indicated.
Food grade bags are used to store food in the back freezer.
Reminder not to store food on the floor of walk-in cooler. Raw meats were covered.
Exhaust hood has been serviced. More deep clean should be done as discussed.

Operator mentioned that they are unable to add lighting in washroom due to older building electric lines were rewired back then to provide kitchen lighting.
