Comments

Cooling units less than 4 C. Freezer -19 C. Handwash stations stocked with liquid soap and paper towels. Temp logs kept. Sanitation and food safety plans available. Dishwasher at 71 C at plate. Bleach sanitizer bottle measured in excess of test strip capability. "Bleached" out the strips so way too much. Recommend labelling the spray bottle with proper bleach to water ratio (typically 1/2 tsp bleach to 1000 ml water. Also recommend obtaining a proper dosing vessel for bleach so it can be added in a consistent manner with the proper ratio of bleach to water. Also recommend getting and using chlorine test strips for auditing purposes.
