Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 3 compartment dishwashing sink is used for manual dishwashing. No drain plugs on site to carry out manual dishwashing. Upon discussion, staff and the new operator stated that only dish soap and water is used for washing dishes/utensils. Bleach bottle was available on site and steps for manual diswashing discussed - wash, rinse, sanitize and air dry.
Correction: Follow proper steps to conduct manual dishwashing to adequately clean and sanitize food contact surfaces. Have drain plugs on site. Both operator and staff should know how to make sanitizing solution in 3rd sink.

Follow up conducted to routine inspection (report #TGIL-CTMRUV)

Findings:
- Drain plugs were available onsite. Staff prepared 200ppm bleach in 3rd sink. Manual dishwashing was discussed with both operator and the staff.
- Handwash sink has been repaired.
- All handwash sink have adequate supply of hot and cold running water, liquid soap and single use paper towels.
- No open bags of flour/rice noted in the back area.
- All dry goods were stored in pest proof containers.
- Gap under the back door has been sealed.
- Operator has completed FOODSAFE Level 1 equivalent (Exp July 11, 2028)

NOTE - Incorporation documents and a copy of Operator's FOODSAFE Level 1 certificate received. Operator confirmed that no changes have been made to the food menu, Food Safety and Sanitation Plan.
