Generally well maintained & operated. Sanitation is good. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. Hot-holding measures > 60 C. Spray sanitizer measures 200 ppm Cl. Dishwasher final rinse temperature measures 78 C.

Cleaning and sanitizing procedures for the Kombucha beverage dispenser must be obtained from the manufacturer, Healthy Hooch, and kept on premises. Until then, the dispensing nozzles must be cleaned and sanitized after each customer to prevent potential contamination from customer to customer via the dispensing nozzle.
