Observation (CORRECTED DURING INSPECTION): Far end hand sink by the fryer station of the cooking area did not have a wall-mounted soap dispenser (broke off); only hand sanitizer dispenser available.
Corrective Action(s): Replace wall-mounted soap dispenser at this hand sink and ensure that it has constant supply of liquid soap and paper towels. For the meantime, provide a pump-style soap dispenser until a more permanent one is installed. Reminder that hand sanitizer is NOT a replacement for hand washing for food handlers.

Observation (CORRECTED DURING INSPECTION): Container of cooked rice was on the bottom shelf with raw food items.
Corrective Action(s): Ensure all cooked and ready-to-eat foods items are above raw meats. Organize the walk-in cooler to ensure there is no potential for cross-contamination.

Observation: Plumbing issues: hand sink beside the dishwasher not working properly and water leak on the pipe connected to dishwasher.
There is another hand sink in that area that is accessible to the employees.
Corrective Action(s): Management is aware and currently addressing the issues (i.e. work order requests sent). Ensure all work orders are completed as soon as possible.

Comments

*Back area hand sink stocked with liquid soap and paper towels.
*Dry storage area - all foods off the floor; needs re-organizing (store cleaning agents away from the pop area).
*Pest control monitoring in place. Contract with pest company.
*Walk-in freezer was at -18 deg C or colder.
*Walk-in cooler was below 4 deg C.
*New low temp dishwasher installed. Chlorine residual was at >50 ppm at the plate surface.
-Ensure staff checks lines and level of sanitizer and soap in the containers.
-Concentration of sanitizer in dishwasher recorded daily in BOH App.
-Ensure dishes are moving in on direction from dirty to clean.
-ACTION: Adjust one of the light cover over the dishwashing area as one corner is hanging off the side.
*Cooking area:

-prep line coolers at 3-4 deg C ambient temp.
-line freezers at -16 deg C ambient temp. (small quantities of frozen items stored in the line freezer).
-hot holding for sauces was above 60 deg C (internal temp); bacon at 60 deg C.
-temperature log available and up to date (temp check done 2x a day; currently not operating 24 hours)

-sanitizer buckets (for wiping cloths) - 200 ppm Quats solution
-service area: milk dispenser at 3 deg C and take out cooler for condiments at 4 deg C
*Dining room area and washrooms were adequately maintained.
*Bar One: not open until afternoon. Glassware washer turned off (to be checked next follow-up inspection).
