Observation (CORRECTED DURING INSPECTION): Cellphone was stored in a metal bowl. Operator stated bowl was not used for food. Identical bowls were used to store ingredients.
Corrective Action(s): Cellphones are to be stored in designated storage areas to prevent potential contamination of equipment and foods. Bowl was properly washed and sanitized at the time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Food was stored in an opened metal can.
2) Raw meats were stored above potential ready-to-eat foods.
Corrective Action(s): 1) Once canned foods are opened, contents must be transferred to food grade containers to prevent potential contamination of foods. Canned sauce was transferred to a food grade container at the time of inspection.
2) Reorganize foods and ensure raw meats are stored below and/or separately from potential ready-to-eat foods.

Observation: Four dead rodents were found in the monitoring station by the staff washroom.
Corrective Action(s): Facility must be maintained free of pests. Contact your pest control operator to determine potential entry points for pests to prevent further infestation. Continue to monitor for pests on a daily basis.

Observation: Rodent droppings were observed in the facility.
Corrective Action(s): Clean and sanitize all areas affected by rodent droppings. Contact your pest control operator to prevent further infestation.

Comments

-Walk-in cooler was at 2C.
-Kitchen prep cooler was at 4C (top and bottom).
-Upright cooler was at 4C.
-Upright cooler in the customer area was at 4C.
-Front service area prep cooler is not functioning. Low potentially hazardous foods are stored in the cooler with ice/water. Foods were at 4C.
-Upright freezer was at -18C.
-Both chest freezers were less than -18C.
-Hot holding was greater than 60C.
-High temperature dishwasher had a final rinse temperature of 79C on the dish surface during the final rinse (minimum of 71C required for sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail and spray bottle were labelled and at 200ppm.
-Mandolin slicer properly disassembled for cleaning and sanitizing after each use.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until July 11, 2028.
