Observation (CORRECTED DURING INSPECTION): Observation: Sanitizer spray bottle in grill area observed empty.
Corrective Action: Fill the spray bottle with 200ppm QUATS solution. *Do not use "Ecolab-Peroxide multi-surface cleaner and disinfectant" for food contact surfaces as it is not approved as food-grade disinfectant.

304 - Premises not free of pests [s. 26(a)]
Observation: Observation: Severe amount of rodent droppngs observed through out the kitchen area, specifically behind laundry bins by back door, in front of electricity panels, behind beer tanks by chest freezer, underneath food prep. tables, grills, coolers, and freezer, and on the lowest part of cashiers counter. Previous pest report (Apr.9) indicated heavy feeding activities in all baiting stations (exterior), but no activity found indoor.
Corretive Action: 1) Call the pest control professional immediately
2) Remove all droppings and sanitize the area
3) Clean the affected areas and continue to monitor for pest activities

Observation: Observation: Small space in between back door frame observed. A hole underneath cashiers handwashing station observed.
Corrective Action: Seal all holes and spaces mentioned above as well as areas recommended by a pest professional.

Observation: Observation: Heavy accumulation of food debris and dust observed underneath all equipment of kitchen, especiall under grills. Unsanitary conditions may attract pests and provide harborage.

- Operator is aware of unusually high temp in the line cooler
- Operator mentioned that he will monitor for the temperature for 1 hr next couple of days and will call the maintenance if the cooler temp. remains to be inadequate. Avoid storing PHF's in the line cooler until the cooler is guaranteed to hold 4C or below.
Low temp dishwasher measured 100ppm chlorine at plate surface
