Comments

Food store with sale of soft serve ice cream (during warmer months) and re-packaging candy. Soft serve is a ready to eat dairy product made on site. Reviewed cleaning and sanitizing procedures for soft serve ice cream machine. Machine is cleaned/rinsed and then a sanitizer with 100ppm chlorine is used to sanitize. Operator states they received training on maintenance and cleaning of soft serve machine. Drip trays are cleaned daily. Walk in cooler - temperature of food 5C - thermostat adjusted during inspection. Monitor daily with your thermometer - 4C/ 40F or colder required. Freezers - good. Cleaning - see above.
