302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Citric acid "Comet" brand used as sanitizer for breakfast service. No sanitizer was made for clean up after breakfast or during breakfast.
Operator made bleach sanitizer >1000ppm during the inspection and then later adjusted to 100ppm in reused Comet bottle that had vinegar.
Corrective Action(s): Please revise your sanitation plan and train your staff to make adequate sanitizer.
Bleach at 100ppm is adequate for sanitizing during breakfast service and for cleaning afterwards.
Recommend to post instructions to ensure all staff are aware. Ensure that your FoodSafe Certified person is present at all times to oversee and ensure sanitizer is being used during service and for clean up.
Recommend to have Chlorine sanitizer strips available for testing to ensure sanitizer is at 100ppm Chlorine.

Observation: Dried items such as cereal stored in bags in crawl space area. This area has a vent to the outside that is grated and screened. Screen holes are larger than pen width and mice have the potential to enter.
Some spilled cereal at the bottom of the shelf.
Corrective Action(s): Place dried items in pest proof containers such as bins or plastic totes and seal to prevent pest entry. AND/OR
Replace screen on vent with screen that has finer mesh to prevent pest entry.

Facility provides hot breakfast between 7AM-10AM, as well as to go bagged lunch/snacks.

Hand wash station adequately supplied with soap and paper towel in dispenser.
Fridges <4C.
Freezers <-18C.
Hot holding unit: staff mentioned they typically put the temperature around 200F, hot items placed in hot holding unit that is preheated.
Tested during the inspection with staff member at 140F, 60C. No food items inside unit at the time of inspection, thank you.
Checked with probe thermometer, please inform staff that setting of 150F will allow hot holding at 60C. Do not use lower settings.
No pests at the time of inspection.
Dishwasher >71C.
Recommend an organized tray holder for cutlery to prevent business end from being grabbed or handled when restocking.
All areas are generally clean and well maintained.
