Corrective Action(s): Ensure during operation a 100ppm bleach or 200ppm quats sanitizer solution is prepared and available for use. General sanitizer formula: 1 oz of regular unscented bleach to 1 gallon of water. If transferring to a spray bottle, ensure spray bottle is labeled. If using a container store all wiping cloths in the sanitizer solution.

Dishwasher registers 72 degrees C at the plate surface during the final rinse cycle.
Pastries displayed behind a glass case.
Freezer at -17 degrees C.
Under the counter cooler at 3 degrees C.
