Observation (CORRECTED DURING INSPECTION): Sanitizer in third sink was very low, not detected on test strips.
Discussed; Sink is filled with approximately 40 L of water; bleach should be diluted at least 1 : 500. This means bleach should be about 80 mL per sinkful. Obtain Chlorine test papers for 50 - 200 ppm strength. Test daily. Bleach should measure 100 ppm. Discussed.

Premise is very clean and sanitary.
Fridges are all < 4 Celsius.
No sign of pests.
Hand sinks are stocked and working.
Dried pepperoni are obtained pre-made, shelf stable.
Discussed kombucha refills. You may not be allowed to do this much longer; a policy is being developed.
