Observation: Built-up of grease observed unerneath the cookline (deep fryer and flat grill). THIS IS A REPEAT VIOLATION. PICTURES TAKEN.

Built-up of grain and flour observed underneath the shelving unit in dry storage area near the ice machine.
Corrective Action(s): Clean and sanitize the aformentioned area. Daily cleaning and sanitizing under hard to reach areas must be conducted to prevent grease and food build-up. Corrected by: January 31, 2024.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs spray bottles measured at 200ppm. 2-compartment sink available. Low-temperature dishwasher measured at 200ppm chlorine. Glasswasher measured at 12.5ppm iodine.
Prep cooler, stand-up cooler, walk-in cooler measured at 4C or lower. Stand-up freezer, undercounter freezer, walk-in freezer measured at -18C or lower. Hot food measured at 60C or higher on top of flat grill.
Ice machine in sanitary condition. Meat slicer observed to be in satisfactory condition.
Exhaust hood vents satisfactory.

Ticket issued for on-going violation of grease build-up underneath cookline.

Overall, facility is well organized.
