Observation (CORRECTED DURING INSPECTION): 1. Operator informed that all utensils are sprayed with sanitizer instead of being soaked in sanitizer dip
2. Sanitizer spray bottles and dispenser not dispensing adequate amount of sanitizer during time of inspection
- Dispenser does not appear to be working properly
- Operator manually bleach solution, concentration from 100ppm - 200ppm
- Operator will notify Ecolab about dispenser not working
Corrective Action(s): 1. Ensure that all dishes/ utensils after being washed with hot soapy water are soaked in a sanitizer solutions (bleach dip at 100ppm OR QUAT sanitizer at 200ppm) for at least 10 seconds
2. Operator will manually mix chlorine sanitizer solution (bleach solution) until dispenser issue is resolved.
Ensure that chlorine sanitizer solution is always at 100 - 200ppm chlorine concentration OR QUATS solution is at 200ppm

Observation: 1.Walk-in freezer converted into retail area without sending in plans for Health Approval
2. Low temperature dishwasher removed from facility without notifying Environmental Health Officer. Only 2 compartment sink left to ware-wash all utensils and dishes.
Operator states that this is enough for ware-washing.
Corrective Action(s): - All alterations must be reviewed by Health Department and Environmental Health Officer.
- Environmental Health Officer will review removal of low temperature dishwasher and inform operators of new actions that must be taken.

Observation: Slight accumulation of rodent dropping located underneath shelving in corner (shelving located by dough mixer)
Corrective Action(s): - Ensure to remove all droppings and sanitize areas

- Employ Pest Control Operator again if necessary

Routine inspection conducted.

During time of inspection, production of snack foods and pani puri water being processed (i.e., gol gappa, chaat papri)
- All handwashing stations were equipped with hot/cold running water, liquid soap paper towels
- All temperatures meet health requirements:
* Walk in cooler at 4C or below
* Blast freezer at -19C
- All food products kept in pest proof containers and stored at least 6" off the floor
