Observation (CORRECTED DURING INSPECTION): Curries stored in the bottom section of the 2 door cooler with inserts registered at 8 C. Whipping cream stored in the 2 door standing cooler re internal temperature at 7 C.
Corrective Action(s): Transfer all potentially hazardous foods to a cooler that is 4 C or below.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher registered at 0 ppm for chlorine.
Corrective Action(s): Chemical bottle was replaced and dishwasher was primed. Final rinse cycle registered 50 ppm chlorine.
The sanitizer concentration should be tested at least once daily.

Observation: 1. Two door cooler ambient air temperature at 8 C. Mostly used for non-potentially hazardous foods.
2. Two door undercounter cooler ambient air temperature at 8 C at the start of the inspection and then dropped to 6.5 at the end of the inspection.
3. 3 compartment sink not draining properly.
Corrective Action(s): 1 &2 :Adjust the temperature or repair so that coolers are able to maintain a temperature of 4 C or below.
Operator called a mechanic at the time of the inspection.

Observation: 1. Sanitizer used for the dishwasher is not labelled with its ingredients/contents or how to use.
2. Lysol liquid cleaners stored in the dry storage area above food.
Corrective Action(s): 1. All chemicals must list have their ingredients listed and all sanitizers should also have instructions on how to use. Refer this to the manufacturer/supplier.
2. All chemicals and cleaners are to be stored underneath food or away from food. Lysol bottles were re-located to the bottom shelf. This is to protect food from chemical contamination.

-Hand washing sink equipped with hot/cold running water, liquid soap and single-use towels.
-Single door standing cooler at 4 C or below.
-2 door undercounter cooler at 4 C or below.
-Single door freezer at -15 C.
-Chest freezer at -18 C or below.
**2 door freezer at -1 C - operator will be using this as a cooler to store the curries until the other coolers are repaired. Do not use it to store frozen foods. Freezers should be at -18 C or colder.
-Surface sanitizer available in a bucket and registered at 100 ppm for chlorine. Wiping cloths stored in solution.
-General sanitation satisfactory.
