304 - Premises not free of pests [s. 26(a)] Observation: Mice dropping were observed behind the hot water tank, along the walls and under shelvings. Some cleaning and sanitizing took place at the time of inspection. Corrective Action(s): Clean and sanitize areas affected by mice dropping. Ensure to spray bleach solution on droppings before sweeping the floor. Use proper PPE. Wash and sanitize equipment that might have come in contact with mice droppings. Remove unnecessary items and move boxes away from the walls so that potential hiding spots are eliminated. Install weather strips under the exit doors. This blocks pest enterance. Routine inspection - General sanitation satisfactory at time of inspection. Any pooling water is cleaned at the end of each day. - Cleaning and sanitizing beer production equipment were discussed with head brewer. - Walk-in cooler only used for storage of finished product and raw ingredients (hops). - All grains stored off the ground, well organized and protected from pest. - Two-compartment sink available for manual dishware washing. Liquid soap and paper towels available at this sink for hand washing. - Ensure to clean and flush the drains to limit the drain fly activity. NOTE: Consult with your pest control company if drain fly issue continued.
