Observation: 1) Dishwasher final rinse temperature was less than 71 degrees C (measured between 65-67 degrees C) at the plate upon several runs at the time of inspection.
2) Dishwasher was leaking at the time of inspection.
Corrective Action(s): 1) Repair the dishwasher so that it has a final rinse temperature of at least 71 degrees C at the plate; Correct today. Please contact the district Environmental Health Officer once the dishwasher has been repaired today.
2) In the meanwhile, only use single-service utensils and manually wash, rinse, sanitize, and air dry the preparation utensils.
3) Leak of the dishwasher was repaired during the inspection.

Observation (CORRECTED DURING INSPECTION): Liquid soap was not available at the handsink in the front service area near the prep. table.
Corrective Action(s): Supervisor placed liquid soap at the counter near the handsink for the time being and stated that they would order the correct type of liquid soap to fill up the dispenser. Ensure all handsinks are supplied with liquid soap, hot and cold running water, and paper towels during operation.

Walk-in-freezer was at or below -18 degrees C.
Hot-held food were at or above 60 degrees C.
200 ppm QUATS sanitizer was available in the containers with wiping cloths.
3-compartment sink was operational.
No signs of recent pest activity were observed at the time of inspection.
