Observation (CORRECTED DURING INSPECTION): - Temperature (internal) of hot held potatoes was 51.4C
Corrective Action(s): - Potatoes were discarded by Operator at time of the inspection
- Keep hot held potentially hazardous foods at 60C or above. Keep lid on containers in steam table to maintain temperature.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings were present on the floor in the following areas:
- corner beside fridge/freezer in front service area
- behind chest freezer in the kitchen
- in the dry storage room under shelving and along edges
Corrective Action(s): - Move out all moveable items and thoroughly clean the above noted areas of the floor to remove all mouse droppings. Sanitize affected areas with bleach solution. Have pest control technician place additional traps in these areas for monitoring and control. Ensure any additional droppings are cleaned up promptly and the area sanitized.

Ongoing actions:
- Maintain a high level of sanitation and ensure foods are kept in pest proof containers to eliminate food sources for pests. Current level of sanitation is not adequate.
- Maintain regular service by pest control technician. Have pest control technician identify any entrance points and have them addressed. Note: Current pest control service is monthly and may need to be increased if activity persists. Operator reported technician is expected today for regular service. Submit copy of service report to EHO.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: - Dry storage room is cluttered creating runways and harbourage areas for rodents.
- Numerous buckets and bins are stored on the floor of the kitchen creating runways and hiding places for pests and affecting cleaning.
- Wire mesh from opening in staff washroom has come loose. Cardboard has been wedged in place to block opening.
- Opening present in wall and ceiling above electrical panel
Corrective Action(s): - Organize dry storage room so that all items are stored off of the floor. Keep floor of kitchen and storage areas clear to allow for cleaning and monitoring for pest activity.
- Tightly re-affix wire mesh over opening to address potential rodent entry point.
- Address openings in wall and ceiling above elctrical panel. Use pest proof materials.

Observation: - Grime present on top of dishwasher and floor of dishwashing area
- Grease/oil accumulation and food debris present on floor under cook line
- Grease accumulation present on exhaust canopy vents. Decal indicates exhaust canopy was due for service 07-Jul-2023.
- Food splatter present on multiple areas of the walls including behind and beside chest freezer, behind sauces at cook line, behind hot holding unit
- Residue present on shelf below prep table
- Miscellaneous items/debris present on floor under shelves in front service area
Corrective Action(s): - Thoroughly scrub/clean above noted areas to remove all grime, grease and debris.
- Have exhaust canopy serviced.

Comments

- Handwashing sinks (front server area, kitchen) were supplied with liquid soap and paper towel
- Dishwasher was operational. 50ppm chlorine detected on dish after cycle. Chlorine test strips present. Check dishwasher sanitizer level daily.
- Coolers were operating at 4C or colder and freezers -18C or below
- Walk-in cooler 4C
- Line cooler 0C
- Fridge/freezer 4C/-22C
- Chest freezers -18C, -22C
- Hot held items (soup broth, curry, rice) were maintained above 60C with the exception of potatoes noted in the above violation
- In use wiping cloths kept in sanitizer solution in kitchen and front server area. Solution in both areas measured 100ppm chlorine
- Spray bottles with chlorine bleach sanitizer solution (100-200ppm) present in kitchen and front service area for use on food contact surfaces
- Ice machine appeared clean and maintained. Ice scoop stored in a sanitary manner.
- Health permit posted. Note: Permit fee has been paid; however, new decal is not yet affixed to permit. Affix valid decal to permit.
- Foodsafe requirement met at the time of the inspection
- Staff washroom was supplied with liquid soap and paper towel.
- Screen doors were in place at exit doors from kitchen and storage room.

To be addressed:
- Flooring under cook line is unfinished and slightly lower than the remainder of the kitchen which is contributing to sanitation issues under the cook line. Flooring must be smooth and washable and should be continuous to facilitate cleaning to ensure it is maintained in sanitary condition. Operator to submit plan and timeline to address flooring.
