Observation: Pop gun and holder require regular cleaning and disinfection.
Correction: Ensure to have both washed and disinfected after each shift. Soak in bleach as discussed at the time of the inspection.

Observation: Multiple food contact surfaces are dirty:
- Inside shelves of all coolers and prep coolers
- Inside lids of prep coolers
- Handles and outer doors of all coolers/freezers
- Shelving units used to store clean equipment
- The knife rack used to store clean knives
**Correct by: IMMEDIATELY**
Correction: Clean the above-mentioned areas thorughly. These areas should be cleaned daily.

**Correct by: IMMEDIATELY**
Correction: Repeat violation. Ticketable offence of $230.
Comments

Follow-up inspection conducted:

- Areas mentioned during the routine inspection cleaned. Droppings were removed.
- Pop gun/holder scrub cleaned and disinfected. To be replaced to a new one as per staff. OK.

Ensure to have floors monitored for droppings EVERY MORNING. Remove them and treat all areas using 1000ppm chlorine solution (1:50 bleach:water). Keep the backdoor closed at all times - by the stairwell.
