Observation (CORRECTED DURING INSPECTION): One large pot of beef stew in Walk-in cooler at 25 deg C -operator indicates it has been there for over 1 hour after cooling at room temperature
Corrective Action(s): You MUST cool down your soups FAST:

STEP 1: 60 deg C to 20 deg C within 2 hours : using ice baths and/or ice wands
then,
STEP 2: 20 deg C to 4 deg C within 4 hours: place pot in fridge

Operator placed stew in ice bath -->move back into the fridge when below 20 deg C (must be within 1 hour)

Observation (CORRECTED DURING INSPECTION): Wiping towels left on counters between use
Corrective Action(s): Leave wiping towels in your bleach sanitizer buckets between uses (will better prevent bacterial growth and recontamination of surfaces)

NOTE: do not add soap to your bleach sanitizer -1/2 teaspoon bleach + 1 liter water is adequate

Observation: -Back prepation area near exit has no handsink within practical distance

-Paper towel roll not dispensed at handsink next to ice machine

-Employee washroom has no running water nor paper towels -NOTE: operator indicates this washroom is no longer in use and that the public washrooms are used instead -noted that the toilet is still functional and toilet paper available at employee washroom
Corrective Action(s): -Place paper towel and dispenser + pumped soap at 2-compartment sink in the back preparation area

-Paper towel rolls MUST be dispensed (otherwise ends will be contaminated) -spindle type dispensers okay

-For the employee washroom you have the following options:
1. remove the toilet and handsink and convert to another use for the restaurant
2. Disconnect the toilet and handsink and lock this washroom from employee access

NOTE: remove any paper towel and soap dispensers no longer in use

3. Operator is overstuffing the Walk-in cooler storing goods directly on the floor

4. 2-compartment sink at dishpit has a hose that extends past the fill-line
Corrective Action(s): 1. Shelving racks: lowest level must be minimum >15cm off the floor to facilitate cleaning underneath

2. Place light covers on all lighting

3. Do not store foods direcly on the floor -store on your shelves. If necessary you may use wheeled carts for storage in walk-way area of Walk-in cooler

4. Install a vacuum breaker/check valve to better prevent contamination of the water supply
