A routine inspection was completed:
- Coolers 4C or colder; freezers -20C or colder; hot holding unit above 60C and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher had rinse cycle temp of 71C at the plate's surface, as per max/min thermometer.
- Food containers with tight fitting lids being used to store food. Owner has discontinued the use of plastic menus and other non-food grade materials.
- Walk-in-cooler is organized. The walls, floors and shelves are clean.
- Exhaust canopy was professionally cleaned in May 2023. Next cleaning due in November 2023 as per service sticker.
- Ceiling tiles and upper walls have been cleaned. Accumulated dust and grease have been removed.
- Openings have been blocked in the dishwashing area to exclude pests. No droppings observed in the premises.
- General sanitation level is good. All outer surfaces of food containers are absent of food debris. Good job.
- All foods stored in food grade containers; covered; labeled; foods stored in groups with raw proteins below RTE foods; and all foods stored 6" off the ground.
- Valid, FoodSafe certified staff present.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
