Observation (CORRECTED DURING INSPECTION): Three compartment sink in the kitchen area being used for food prep making it difficult to wash hands.
Corrective Action(s): Utilize the two compartment sink near the opening/walkway as the designated hand sink for both front and back staff. Ensure sink is equipped with hot/cold running water, liquid soap and single-use towels at all times.

Routine Inspection
-All coolers at 4 C or below.
-All freezers at -18 C or below.
-Hand washing sink - see above.
**Recommend placing soap and paper towel at all the three sinks in sushi bar.
-High temperature dishwasher registered at least 71 C during the final rinse.
-Surface sanitizer in bucket registered at 200 ppm bleach.
-Fish thawing under cold running water.
-Discussed thawing procedures for smoked salmon.
-Hot holding of miso soup above 60 C.
-Sushi rice - no changes to standard recipe however, testing pH is recommended (must be 4.2 or below).
-Permit to Operate posted.
**Increase frequency of cleaning hard to reach areas (behind and underneath equipment).
