Observation (CORRECTED DURING INSPECTION): Four knives were found stored in the space between two prep tables in the kitchen.
Corrective Action(s): Knives were removed and placed into the dishwashing area at time of inspection. Ensure that knives or utensils are not stored in this space as it cannot be effectively cleaned and sanitized.

Observation (CORRECTED DURING INSPECTION): Front hand washing station in sushi preparation area was obstructed by several plastic containers.
Corrective Action(s): Items removed at time of inspection. In addition to providing hot and cold running water, liquid hand soap, and single use paper towels, ensure that all handwashing stations are accessible at all times to facilitate proper hand washing.

Observation: Staff clothing and personal items were stored in back dry storage area directly above or in contact with food items such as whole fruits and vegetables.
Corrective Action(s): Ensure personal items are stored away from food to protect from potential contamination. Dry storage space may need reorganization. Potential space is also available in the washroom behind the door. Date to be corrected by: Today.

Routine inspection conducted:

- Coolers at 4 degrees C or less
- Freezers at -18 degrees C or less
- Hot holding internal temperatures (miso soup and rice) at 60 degrees C or more
- Buckets of bleach water sanitizer available at 100 to 200 ppm chlorine in front and back areas. Reminder: Ensure that all wiping cloths are stored in bleach water sanitizer when not in use.
- High temperature dishwasher measured 76 degrees C at the utensil surface during the final rinse.
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- No evidence of pest activity observed at time of inspection
- FOODSAFE requirements met at time of inspection
- Temperature records for cooler units and dishwasher are being maintained. Note: Please indicate which units are being monitored and recorded on the temperature log.
