203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Sauce made the previous night was at 11C and chicken made the previous night was at 6C. Items were placed in large container to cool.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. To rapidly cool potentially hazardous foods, items must be cooled on shallow trays. Chicken was placed onto shallow trays at the time of inspection and sauce was discarded.

Observation (CORRECTED DURING INSPECTION): Vegetable cutter was found to have dried food debris.
Corrective Action(s): Ensure all equipment is properly washed and sanitized after each use. Items may require additional presoaking prior to washing. Equipment was washed and sanitized at the time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1) Aluminum foil covering wicker baskets was found to be dirty and is not cleaned after each customer. This is an ongoing violation.
2) Used plastic bags were used to cover foods in the prep cooler.
3) Scooping bowls are stored directly inside food containers.
Corrective Action(s): 1) Aluminum foil must be changed after each client. Aluminum foil is not reusable and may potentially contaminate foods. Aluminum foil was discarded at the time of inspection. Reoccurrence of violation will result in the issuance of a violation ticket.
2) Do not use used bags to cover/contact foods. Plastic bags cannot be reused - may potentially contaminate foods. Plastic bags were discarded at the time of inspection.
3) Do not store scooping bowls inside food containers, especially sauce containers. May result in contamination of foods. Scoop was removed at the time of inspection.

Observation: 1) 2-door prep cooler is leaking water and door seals are in pool condition. Adjacent prep cooler also requires repairs or replacement of door seals.
2) Single door prep cooler was at 8C.
Corrective Action(s): 1) Service cooler and ensure they are in good working order.
Correction date: 1 week.
2) Service or adjust cooler to ensue it can maintain 4C or less at all times. Operator obtained cooler unit from another restaurant and has elected to stop using cooler unit.

-Walk-in cooler was at 4C.
-2-door prep cooler was at 4C (top and bottom)
-2-door under counter cooler was at 4C.
-Front sweets cooler was at 4C.
-Chest freezers were less than (2 in kitchen and 1 in back storage) -18C.
-Under counter freezer was at -12C.
-Items hot holding were at a rolling boil (greater than 60C).
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail was at 200ppm.
-Foods general stored off the floor and covered.
-General sanitation satisfactory. Additional cleaning required in the sweets cooler.
-No signs of pests noted at the time of inspection.
-Operator FoodSafe Level 1 valid until May 29, 2023.
