Observation: Alternate paper towel dispenser is in deli area; however it is located directly above the meat slicer. In addition at the time of the inspection meat for slicing was noted located underneath. This could cause cross contamination from splatter/water dripping from handwashing.
Corrective Action(s): Relocate paper towel dispenser so that it is not directly over the meat slicing area or remove this dispenser and load wall mounted dispenser (empty at the time of the inspection). Correction date: today.

Comments

-General sanitation is satisfactory although some attention needed behind equipment to remove debris.
-Hot and cold water present.
-Handsink in deli supplied with liquid soap and paper towel. *Dish soap is being used from adjacent sinks. As noted in previous report, supply soap in a pump style dispenser at the handsink for handwashing purposes.
-Staff/public washroom supplied with liquid soap and paper towel for handwashing. *Supply dispenser for paper towel or obtain correct paper towel for wall-mounted dispenser.
-Small kitchen is used for making soup, salads, and cakes. Soup is cooled and sold cold. They will re-heat & serve for customers if requested. Salads marked with best before date.
-All coolers were 4C or colder
-Freezers were maintaining food in a frozen state.
-Bleach sanitizer present in spray bottle (200ppm chlorine). Ensure meat slicer is sanitized every 4 hours while in use.
*Delivery had arrived at the time of the inspection. Ensure all food items are put away on shelving (6 inches off of the floor).
-No signs of pest infestation noted at the time of the inspection. Monitoring is in place.
