Observation (CORRECTED DURING INSPECTION): 1) Knives stored on magnetic knife holder were visibly dirty with dried on food debris.
Always clean knives thoroughly before putting them on holder.
2) Utensils were found stored in a small stainless container filled with room temp water. If storing utensils in water it must be either hot (over 60 Celsius) or in ice water.

Sanitizer spray was stronger than needed; use only about 1 tsp of bleach per 1 liter of water.
