203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Six large pails of cooked food (e.g. dal, chickpea curry, sauce) were measured with an internal food temperature of approx. 8 to 9 degrees C. It was stated that food was prepared the day before.
Corrective Action(s): As staff were unable to discard all food at time of inspection, bleach was intentionally added to food items in front of staff to prevent re-use of food items. Staff to discard all above-noted food items. Ensure potentially hazardous foods are cooled properly from an internal temperature of 60 degrees C to 20 degrees C within two hours, and from 20 degrees C to 4 degrees C within 4 hours (6 hours total maximum) in order to limit the growth of potential pathogens, including the potential production of heat-stable toxins. Some methods to facilitate rapid cooling include, but are not limited to, the use of large shallow containers (greater surface area) and/or ice wands.

Observation (CORRECTED DURING INSPECTION): No food contact surface sanitizer available at time of inspection.
Corrective Action(s): Bleach water sanitizer solution was prepared and measured at 100 ppm chlorine. Ensure that at all times, sanitizer is available (front and back areas) at effective concentrations for sanitizing food contact surfaces (e.g. 100 to 200 ppm chlorine). Ensure all surfaces and equipment are properly sanitized.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Rasmalai stored in open metal can in walk-in cooler.
2. Three metal cans of pineapple (sealed) were observed to be severly dented near the bottom and along the seal.
3. Food items uncovered in walk-in cooler (e.g. tray of chickpeas) and in dry storage areas (e.g. flour).
4. Food items stored directly on the floor (e.g. bags of dry food product, such as flour).
Corrective Action(s): 1. Open can of rasmalai discarded. Ensure that once cans are opened, their contents are immediately transferred to an appropriate, foodgrade container with a lid. Once opened, metal cans can deteriorate and rust, leading to potential contamination of food.
2. Metal cans set aside to be returned to supplier. Ensure metal cans are in good condition. Metal cans that are in poor condition (e.g. bulging, dented along seal) may potentially expose the food contents to contamination and/or allow for pathogen growth. These cans are to be discarded or returned to the supplier.
3. Ensure all food items are properly covered to minimize risk of potential contamination.
4. Ensure all food items are properly stored off of the floor to minimize risk of potential contamination (e.g. from spills on floor) and also to help facilitate cleaning of floors.

Observation: Large quantity of equipment and supplies not required for restaurant operations stored in back storage area. Unable to walk through equipment storage area to assess for presence of pest activity.
Corrective Action(s): Ensure back storage area is properly organized and items not required for business operations are removed. Cluttered storage areas may promote the harbouring of pests. Date to be corrected by: July 26, 2021.

Observation: Food debris and/or oil observed in the following area:
1. All prep tables, including lower storage shelves.
2. Cook line canopy, floor, walls.
3. Floor areas: Along floor-to-wall junctions and underneath equipment (e.g. floors under prep tables).
Corrective Action(s): Ensure all above-noted areas are properly cleaned to remove food debris and oil. Food debris and oil may potentially attract pest activity, and may impact the sanitary operation of the food premises. Date to be corrected by: July 16, 2021.

Observation: Back area prep cooler at 6 to 7 degrees C.
Corrective Action(s): Ensure cooler is repaired, adjusted, or replaced in order to maintain food at 4 degrees C or less. Note: Minimal food storage at time of inspection--few items moved to another cooler. Do not store items in this cooler until it is capable of maintaining food at 4 degrees C or less. Date to be corrected by: July 14, 2021.

Observation: The following equipment has been installed on the premises without written health approval, and are absent from the Fraser Health approved floor plans:
1. Cooking canopy/equipment in back area.
2. Preparation cooler and preparation tables in back area.
3. Additional freezers.
Corrective Action(s): Submit a revised floor plan to the Fraser Health Environmental Health Officer for review. Premises and equipment must be maintained as per approved floor plans. Changes to equipment and layout are subject to new health approval. Date to be corrected by: July 16, 2021.
