General sanitation good
No evidence of pests
Monitoring records on site and in use for refrigeration systems - please also include the sanitize (aka rinse) step of the dishwasher to ensure it is heating properly. Manufacturer's instructions state gauge is to reach 82C. Make sure the check occurs during the rinse cycle (not wash)
