Observation (CORRECTED DURING INSPECTION): Container of curry sauce measured 35C in the cooler and was covered with saran wrap. Operator mentioned it was in cooler for 2 hours. This is not an acceptable cooling method.
Corrective Action(s): Discard curry sauce. Follow proper cooling method. Foods must be cooled from 60 to 20C in 4 hours and 20 to 4 c in 2 hours. Ice water bath, ice wands, and pouring sauce into multiple portions must be used to cool foods quickly. Foods to be cooled must not be covered tightly. Date to be corrected: today

2) Seafood stored in a double wrapped bag above vegetables. All meat and seafood products must be stored below vegetables to prevent cross contamination. Operator says these foods are to be cooked.
Corrective Action(s): 1) Empty canned contents into food grade plastic container to be put into the cooler
2) Organize coolers to ensure raw meats and seafoods are stored above ready to eat products.
